Peanut Butter Chocolate Lactation Bars

Dairy and gluten free lactation bars. Can be made vegan as well

Ingredients

The Base

  • 2 cups dates
  • 1 cup walnuts
  • 1 cup oats
  • 1 tbsp brewers yeast (optional)
  • 2 tbsp chia seeds
  • 2 tbsp flax seed
  • 1/4 cup peanut butter (or other nut butter)
  • 1/4 cup cocoa powder
  • 1/4 cup honey (or sub maple syrup)
  • 2 tbsp water (or more if too thick)
  • 1/4 cup melted coconut oil

Topping

  • 1/4 cup melted coconut oil
  • 1/2 cup cocoa powder
  • 1 pinch salt
  • 2 tbsp honey (or sub maple syrup)

Instructions

  1. Preheat oven to 350 F

  2. In a food processor, blend dates and walnuts until its a mealy/flour texture

  3. In a bowl, add all the bar ingredients and mix

  4. Pour into a greased 8x8 pan and push in to create a firm bar

  5. Put in the oven for 15-20 mins

  6. Take it out and let cool

  7. Once the bar/base has somewhat cooled, mix all the Topping ingredients and pour over the cooled bar

  8. Put it in the fridge and let it harden

  9. Enjoy!

Recipe Notes

Feel free to add a variety of nuts and seeds such as almonds, brazil nuts, walnuts, sunflower seeds etc in the blender. Also feel free to melt your own chocolate chips for the Topping instead of using coconut oil and cocoa powder.
